Pesto Grilled Cheese
While that JB quote may be questionable, this grilled cheese is not. Originally, I was going to make plain grilled cheese and serve it with sauerkraut or pickles and call it a totally fermented meal. But when I opened the fridge, I saw I a jar of pesto, staring me down. I think this is a good example of food that's not generally considered healthy, but can easily be turned into a more nourishing meal. Sourdough whole wheat bread made from unbromated flour, raw local grass fed cheese, pesto and I ended up going with dill pickles. Fatty and fermented. Doesn't get much better than that!
1. Have good bread, cheese, pesto and fermented vegetables at hand.
2. Turn on panini machine (I know I took a cheap shortcut), or melt some ghee in a pan on medium/high heat. On the higher end of medium/high.
2. Slice bread and cheese, apply pesto to one half of bread. Add cheese and place the matching slice on top.
3. Apply heat to sandwich. The panini maker is nice because you don't have to flip. But it's also non-stick.
